Today, we sit down with the owner Yolanda Ewing-Tsatas to discuss the restaurant that has served politicians and Presidents, movies stars and royalty alike. Even Muhammed Ali has dined at our local eatery. What is the biggest draw? What made you decide to go into the restaurant business? As far as I know, it is not an easy industry to run “No, it’s not but I love what I do. I refuse to compromise on service and quality, and that goes from running a tight shift with the staff to making sure the food it always top notch” Yolanda is quite the entrepreneur and has taken the helm with the expectation of continuing the tradition. She also has an impeccable style with her signature Northwestern Hat and glasses, she greats guests and make sure you are seen and taken care of from the moment you walk in. What made you decide to open your restaurant in Evanston? “We used to be called Clark’s ON Campus but to accommodate the increase in clients, we decided to move location to 804 Davis Street and now we are called Clark’s OFF Campus. LEVY SENIOR CENTER FOUNDATIONwww.evchamber.com 33 Living in Evanston In 1876, with America’s centennial festivities underway, Evanston celebrated not with fireworks, but with waterworks its Centennial Fountain. At its dedication, it was lauded as a symbol of “temperance and sobriety.” For more than 140 years, it has hosted numerous water features, including the 1912 replica fountain currently in the Merrick Rose Garden. Located in the heart of Evanston, it grew quickly to welcome downtown businesses along Davis Street, and Orrington and Sherman avenues. As the fountain has changed or even disappeared so too has the surrounding commercial district. But it has remained Evanston’s cultural center and a focal point of Evanston business and social life. It’s really more of a triangle. And where’s the fountain? 1876 In the midst of America’s 100th birthday, cities across the country look for ways to commemorate the event. Evanston raises funds for a two-tier fountain adorned with water birds. During his July 4 dedication, Edward Taylor highlights Evanston’s and Northwestern’s spirit by recognizing water as a symbol of temperance. 1893 The last decade of the 19th Century brought streetcars to the streets of downtown Evanston intermingled with horse traffic. When the Chicago Surface Lines electric streetcars were introduced in 1893, the congestion became a headache for city leaders. The original fountain was moved and replaced with a replica funded by the City. 1915 By 1915 automobiles have joined the congestion in downtown. Aldermen are asked to consider “improvements” to meet the challenges of streetcars, pedestrians and autos. The need for increased parking and safety are cited, and the fountain is in the way. Evanston residents are not willing to sacrifice their beloved fountain. 1926 Evanston’s War Memorial Committee is seeking a memorial to honor those killed in The Great War. Wanting a central site, Fountain Square stands out as the perfect location, but the fountain will have to move. Again, residents defend their 50-year- old downtown gathering spot by lighting a spectacular holiday tree which outshines all others in the five-year tradition. 1937–41 Once again, the fountain is identified as a contributor to the accidents to pedestrians and autos. Many ideas are generated, and finally one is selected and approved. 1946 After securing victory in Europe and the Pacific, America sees an unprecedented boom with more families able to purchase autos. With increased traffic clogging downtown, the fountain finally succumbs to the pressure it’s faced for decades. For the first time in 70 years, Fountain Square is without its namesake feature. 1949 A reconfigured downtown includes a large granite fountain and cenotaph commemorating Evanston’s war dead. It is dedicated on Armistice Day. Two years later Gen. Douglas MacArthur visits the war memorial and places a wreath at the base of the flagpole. 1976 Fountain Square’s fountain is upgraded with new water features. The war memorial is replaced with new columns that commemorate Evanston’s war casualties from the Civil War through Vietnam. 2019 After years of neglect and worn infrastructure, Fountain Square, or Veterans’ Memorial Plaza as it was renamed in 2003, and its environs are re-imagined again. Unveiled in May, the new plaza features a zero-depth fountain with water jets, a glass wall listing the names of Evanston soldiers killed in war and an open gathering space on the south side of Davis Street.
